Roasted Cauliflower with Meyer Lemon Mayonnaise

I imagine this is good the way the recipe reads, but we have always done it differently. Changes are shown in parentheses.

  • 1/2 c. Mayonnaise
  • zest and juice of 1 Meyer lemon
  • 1 head of cauliflower (or broccoli)
  • Sea Salt
  • Parsley (or other seasoning, eg dill weed and dill seed)

(Preheat oven to 450 degrees.)

Mix Mayonnaise with lemon juice and zest (and seasonings).

(Poor mayonnaise mixture over broccoli or cauliflower bits in the roasting pan. Roast for 20 minutes.)

Roast bite-sized bits of cauliflower at high heat and dust with sea salt and minced parsley.

Serve with Meyer Lemon Mayonnaise.
